Sona’s Healthier Armenian Vozni Cake Recipe
You can have your cake and eat it too!
As you know, sugar and traditional desserts are not the best for skin health. A diet high in processed sugars that spike insulin can quickly age the skin and even alter sebum production, thus leading to breakouts or acne.
However, like I always say, you can make all your favorite recipes and childhood sweet treats much healthier without sacrificing flavor.
Armenian “Vozni” cake is one of my favorite childhood cakes, and I have created this healthier version that tastes just as good. Try this healthy and delicious recipe for yourself and see!
What Makes The Recipe Healthier?
First of all, anytime you make anything at home, you are already making a healthier choice.
Store-bought cakes and desserts often have too much sugar and are full of artificial ingredients, corn syrup, and seed oils.
So by baking at home, you get to control exactly what goes into your cake!
Secondly, I have replaced cane sugar with coconut sugar, which is much lower on the glycemic index and does not spike insulin as high as regular white or brown sugar.
Finally, I only use 2 tablespoons of sweetened condensed milk to sweeten the cream.
You will absolutely LOVE this recipe!
Ingredients and Recipe
For the Vanilla Batter
- 3 Eggs
- ¾ cup (about 120g) Coconut Sugar
- 60g Melted Unsalted Butter
- 135g Plain Yogurt (Armenian matsun)
- 150g White Unbleached Flour (you can also use einkorn or oatmeal flour)
- ½ Teaspoon Baking Soda
- ½ Teaspoon Baking Powder
- 1 Pinch Salt
Beat together the eggs and sugar until well combined. Add the yogurt and melted butter and continue to mix.
Once combined, add the baking soda, baking powder, salt, and flour. Mix slowly until well combined. Don’t over-mix.
For the chocolate dough, add all the above ingredients except the flour; remove 2 tablespoons of flour from the 150g of pre-measured flour, and add 2 tablespoons of cocoa powder instead.
Pour the vanilla and chocolate batters separately onto baking sheets lined with parchment paper, and using a spatula or spoon, spread evenly.
Bake both cakes in a 350 F preheated oven for 15 minutes. Allow the cakes to cool completely before cutting into circles.
Using a blender or food processor, pulse-blend the leftover batters together to create the decorative “Vozni” effect around the cakes.
For the Cream
- 300g Heavy Whipping Cream
- 2 Tablespoons Sweetened Condensed Milk
- 2 Tablespoons Cream Cheese
- 2 Teaspoons Pure Vanilla Extract
Whip the cream with an electric mixer until soft and fluffy. Add the condensed milk, cream cheese, and vanilla.
Mix until incorporated.
Using a knife, spread the cream on the chocolate cake circle, then add the vanilla cake on top. Cover the cake with cream and then add the decorative crumbs all around until the cream is well covered.
Allow the cakes to set for a couple of hours. Enjoy!
