Sona’s Blueberry Muffins (No Cane Sugar)

When it comes to healthy eating, one of my biggest rules is color!

I try to eat a diverse blend of colorful whole foods. Fruits, veggies, greens, and nuts are packed with vitamins, minerals, antioxidants, and polyphenols that support overall health.

A diverse diet with plenty of different colors from real, unprocessed foods is fantastic for our organs, gut, and immunity. These foods also impact how we look because of their connection to skin health.

Purple and dark blue fruits and vegetables are especially great for the brain and heart. Blueberries in particular are one of my favorites because they are low on the glycemic index, have a lot of fiber, and have an amazing antioxidant profile.

While eating fresh fruits like blueberries is great, sometimes you want to get creative and have some fun!

Sure, cooking fruits and veggies can slightly lower their vitamin and mineral content, but studies show that they still retain many of their antioxidants and polyphenols, as well as their fiber, which is associated with skin health.

So here is my delicious, cane sugar-free blueberry muffin recipe that is perfect as a breakfast, snack, or dessert!

Ingredients and Recipe

  • 1 Cup Plain Full-Fat Yogurt 
  • 4 Eggs
  • 1/2 Cup Whole Milk 
  • 1 Cup Maple Syrup or Honey 
  • 220g Soft Unsalted Butter 
  • 2 Teaspoons Vanilla Extract 
  • 3½ Cups All-Purpose Flour
  • ¼ Teaspoon Salt 
  • 1 Tablespoon Baking Powder
  • 2 Cups of Blueberries (you can substitute for any other berry you like!)
  • 1 Tablespoon of Coconut Sugar to Sprinkle on Top

Preheat your oven to 350F.

In a large measuring cup or bowl, mix the yogurt, eggs, milk, maple syrup, vanilla extract, and cubed butter. Combine well.

In a separate bowl, pour over the flour and fold to combine. Add the blueberries and continue to fold. The butter doesn’t have to be mixed; it can remain as cubes in the batter.

Pour the mixture into muffin pans with parchment paper using an ice cream scoop. Sprinkle some coconut sugar on top and bake for 25-30 minutes or until golden.
