Armenian Bughlama For Collagen Support (Perfect Fall Recipe)
I’ve always said it, and I’ll say it again… I think Armenian women are the most beautiful in the world!
We have this natural beauty that I think is so effortless, feminine, and gorgeous. We dress the best and are the most selfless women!
I also think a lot of our natural beauty comes from what we ate growing up. A diet rich in fresh fruits and veggies like apricots, mulberries, tomatoes, and purple basil supports beautiful, healthy skin.
One important factor for skin health and beauty is collagen, and Armenians get a lot of collagen and compounds that support collagen health and synthesis from foods like trout and beef stews.
One of my favorite skin-healthy meals that supports collagen is my grandmother’s Bughlama!

Ingredients and Recipe
- 4 lbs Short Ribs (or any meat with bones, cooked and separated from bones)
- 4 lbs Pumpkin or Butternut Squash (cut into 2-inch pieces)
- 1 Large Diced Onion
- ½ Cup Dried Cornelian Cherry (or dried unsweetened cranberries)
- 2 Tsp Dried Dill
- 1 Tsp PaprikaÂ
- ½ Tsp Cayenne PepperÂ
- ½ Cup SugarÂ
- 100g ButterÂ
Several cups of the beef broth from cooking the meat
The recipe is actually very simple; all you have to do is layer on all the ingredients.
Start with a layer of pumpkin, then add the onions, meat, cornelian cherries, salt, spices, sugar, and butter, and then repeat the process 3-4 times until you run out of ingredients.
Top the entire pot with the beef broth and start boiling with a slightly open lid.
Once boiling your can reduce the heat to allow the pumpkins to cook fully. Taste throughout and add salt to taste.
Once the pumpkins have cooked and your entire home smells like autumn, serve and enjoy!
This is the perfect fall recipe that reminds me of my childhood every time I eat it. It’s also an amazing way to get in some great nutrients during the cool autumn months.
