Ingredients
- 25 - 30 Medjool Dates
- 1½ Cups Unsalted-Roasted Pistachios
- 1½ Cups Unsweetened Coconut Flakes
- 200g Dark Chocolate
How To Prepare
Start by pitting your dates, opening them up, and laying them flat on parchment paper. Place dates close together and compact to avoid gaps as much as possible. Lay a second parchment sheet on top and, using a rolling pin or cup, flatten the dates more to create an even and tight layer. Slowly and gently pull off the top parchment layer.
In a food processor, blend pistachios until creamy and smooth. This may take a few minutes. You can add a pinch of salt if you like.
In a bowl, mix together unsweetened coconut flakes and smooth pistachio blend.
Add mixture on top of dates and spread evenly with a spatula.
Melt chocolate and spread across in an even layer. If you want a better chocolate texture, you can add a tiny bit of coconut oil to the chocolate as it melts. Mix well to temper the chocolate and create a better shine and snap when cooled.
Let the chocolate cool and settle before enjoying. You can cool the bar in the fridge for a better crunch and consistency.
